Wine Overview
This is the first Chablis released in the Marchand & Burch range. Pascal and Jeff have been assisted in the winemaking by Patrick Piuze, a Canadian who has made quite a name for himself in Chablis in recent years.

Vinification:
Pressed half de-stemmed, half whole bunch.
Long fermentation in French oak barrels.
Fermentation with a lot of lees but no batonnage to give complexity and freshness.
Ageing:
21 months of ageing, including 5 months of alcoholic fermentation.
65% aged in French oak barrels and the rest in tank. No new oak.
No fining, and a light filtration.
Bottled on the 17 of June 2011.
Tasting Notes:
Pale straw in colour. The nose shows fine lifted lemon and grapefruit citrus aromas with mineral notes. The palate is finely structured with lemon zest flavours, herbal hints and a chalky mineral texture. It has a generous mid palate weight checked by minerally zing and subtle acidity on the finish.
